Smoked Salmon Pizza

Smoked Salmon Pizza 1

Makes 2 large pizzas (easily halved)

This pizza was a happy and most delicious accident. It was raining kangaroos and koalas outside and the idea of getting soaked on a trip to the supermarket really did not appeal. So instead we did the sensible thing, put our PJs on, binged on Netflix and emptied the fridge.

We had some hot smoked salmon that needed using, some sad looking spinach and we always have a selection of cheese so a pizza with our favourite 2 ingredient pizza base seemed the obvious choice.  I always have a stash of homemade pasta sauce in the freezer, but if you don’t, tomato paste will work wonders as a base too. What started off as a pot luck dinner turned out to be one of our all time favourite pizzas. Isn’t it funny how life turns out?

What do you like to do on rainy days? Are you a fan of pyjama days too? What’s your go-to pizza topping?

How to – Traditional

  1. Preheat the oven to 200C /180C fan-forced.
  2. Mix flour and Greek yogurt together in a bowl. Transfer to a  lightly floured work surface and knead the dough, adding more flour as needed to keep dough from being too sticky, for about 8 to 10 minutes.
  3. Lightly grease 2 pizza trays. Divide dough in half and spread each portion of dough to edges of pan.
  4. Bake for about 5-7 minutes until just golden at the edges. Remove from the oven and carefully flip the base over using a spatula.
  5.  Cover the base with tomato sauce.
  6.  Sprinkle over spinach leaves, and then top with half the mozzarella, then the smoked salmon, then the feta and finally, the remaining mozzarella.
  7. Return to the oven for another 8-10 minutes until the edges are golden and the cheese has melted.

I make a similar pizza base and it is really handy and helpful if you just want something quick although sometimes I’m super lazy and just use Lebanese bread LOL. This topping sounds scrumptious!

    • Yes, Lebanese bread makes ace pizza bases too! I think it’s the combo of the smoked salmon and the two cheeses that makes this topping so scrummy!

Am looking forward to trying this recipe, as regular pizza dough generally doesn’t agree with me. Putting this in my file, ready for when the tomatoes in our garden have ripened.

    • This is so much quicker and easier than conventional yeasty pizza dough – I hope you like it as much as we do! You’re so lucky to grow your own tomatoes – I bet the tomato sauce you make will be next level!

  • Ooh, I love feta on pizza and this sounds like such a delicious combination of toppings!

  • OMG… what a combination. I have to try this. YUM!!

    • The pizza base is so quick and so easy it’s ridiculous! I know smoked salmon sounds a bit wrong on a pizza but it tastes so right!
