Manic Monday

8 weeks on from surgery, 3 weeks on Thyroxin and my body clock is now well aligned. It knows it’s my Monday off and sleeps in accordingly! But, I can’t sleep too long, I’ve got people to see, places to go and things to do!

First stop, is the Prof’s  office where I drop off some  of those yummy Chocolate Shortbread Stars. I finish them off with a dusting of icing sugar so they look fully festive. I hurry back to make my 9.30 Body Pump class where I’m pumped to the max. I’m feeling good and gaining strength – hopefully it won’t be too long before I get back to my BC weights.

Back at the ranch, I rush around like a headless chicken, cleaning and cooking. Anton is coming for dinner tonight and it’s prep-a-porter! Then I’m off for my long awaited spa session to make the most of my kind and generous voucher given to me by my wonderful work buddies. It is totally heavenly; a billabong footbath, a pedicure, a facial and a massage. I’m so laid back after all that, that by the time I come out, I’m almost horizontal!

This is my last day of freedom so I don’t want to waste a minute! I head out to meet Pippa and we’re off to the mall. I’m desperate for some of those cookie cutters that have cookie cutters within cookie cutters. Isn’t it satisfying when you go shopping and find exactly what you’re looking for? After tea and cookies back at home, I set about preparing the feast for the fellas.

Tonight, we’re starting with Sandra’s Champion Chicken Soup, followed by Toad in the Hole, David’s Maison Mash and Caramelised Carrots. We’ll finish off with Donna Hay’s No-Fuss Banana and Caramel Pudding and homemade frozen yoghurt. I’m well on track, until I realise that I haven’t put my ice cream maker in the freezer which has well and truly scuppered my frozen yoghurt plans! I improvise with Donna Hay’s Mango and Banana Yoghurt Gelato which is quick and easy to make and even healthier than my original recipe!

Dinner is delicious – it looks good and tastes good too, and it’s perfect for a miserable Monday night such as this.

An absolutely fabulous way to start the week – and it can only get better!
