A Busy Boxing Day

I’m up with the birds and eager to get busy with my cool Christmas gifts. It looks like it’s going to be a scorcher today so I give my new uber-cool gym clothes a go and head outside for a run. It feels good! I also manage to knock one minute off my post-operative personal best so I’m totally stoked!

When I get home, I’m starved and decide to cook up a Pete Evan’s All Day Breakfast – Shakshuka Eggs. I’ve been coveting this recipe for ages and have all the ingredients on standby in the fridge, ready for this very moment. It’s spicy and delicious. It takes some time to create, but it is definitely worth the wait! Why go out for breakfast, when it tastes this good at home?!

After the outsize breakfast, I’m desperate to try out some of my other gorgeous gifts – so it’s out with the new cookie cutters. As it’s Christmas I feel  like making some gingerbread, but as I have snazzy new cutters, I’m going to break with tradition, and instead of Gingerbread Men, I make Gingerbread Monkeys! The recipe is simple, quick and the dough is Sam-Proof! They pass David’s taste test so they must be good!

In the afternoon, we go into the city to catch a movie. I’ve never seen the city so jammed with people, it’s full of psycho sale shoppers! It’s as if people think the world is coming to an end, and it’s  last chance shopping! They’re all mad as cut snakes! At least, the movie was ace; “Tintin,” we highly recommend it!

I don’t know where the day goes because by the time we get home, it’s time to get back into the kitchen and throw dinner together! Tonight it’s Crisp-Skinned Fish with Mustard Butter and it’s mind-blowingly good. We love it because it’s easy to make, looks great, tastes terrific and if we saw it on a restaurant menu, we’d definitely order it! What a busy Boxing Day!
