Stacey's Crunchy Asian Slaw

Serves a crowd (but easily halved)

This salad from Stace is ace and the perfect addition to any barbecue. These days we eat a lot less processed food, so rather than use a ready made dressing, I prefer to whip up one of my own and it’s so easy, it’s ridiculous! Of course, if you’re pushed for time, swap the cabbage for a bag of pre cut coleslaw, and then just dress it up! 

Ingredients

1/2 red cabbage, finely sliced

1/2 white cabbage, finely sliced

4 spring onions, finely sliced

1/3 cup slivered almonds

1 packet Chang’s crispy noodles

DRESSING

1/4 cup rice vinegar

2 tablespoons soy sauce (or Tamari)

2 teaspoons sesame oil

How to

  1. Chop cabbage and spring onions.
  2. Mix dressing ingredients in a jar and dress the salad.
  3. Add crispy noodles and almonds and mix to combine.

TIP! Make this super side salad into a main, just by adding some cooked chicken!
