Slow Cooker Chocolate Self Saucing Pudding

Serves 6-8

If you thought your slow cooker was just for savoury dishes, then think again. This is Chocolate Self-Saucing Pudding super easy and delicious! 

When I was young, my mum used to buy a cake mix from the supermarket called Saucy Sponge. It was so naughty but so nice and it would always be my preferred pudding. It used to come in all different flavours too but chocolate was my favourite. I used to love the way the light sponge would magically sit upon a sea of deliciously sweet sauce.

This self saucing pud is just like the saucy sponge, I know and love, except that you can prepare it in less time that it takes to go to the shops and buy a packet mix! I’ve updated the recipe using the Thermomix to prepare the pud, but it’s super easy whichever way you do it! The best thing about this pud is, that you can just leave it in the slow cooker and let it do it’s thing!

It really is the ultimate-no-fuss comfort pud. Put it in the slow cooker and let the magic begin!

Ingredients

FOR THE SPONGE

90g  butter

¾ cup (180ml) milk

1 teaspoon vanilla extract

1 cup (220g) caster sugar

1 ½ cups (225g) self-raising flour

2 tablespoons cocoa powder

1 egg, beaten lightly

FOR THE SAUCE

1 cup (220g) firmly packed light brown sugar

2 tablespoons cocoa powder, extra

2 ½ cups (625ml) boiling water

How to – Traditional

  1. Grease  the slow cooker bowl.
  2. Melt the butter in milk over low heat in medium saucepan. Remove from heat and allow to cool for about 5 minutes.
  3. Stir in vanilla and caster sugar, then the sifted flour and cocoa,then the egg.
  4. Spread the mixture into crockpot.
  5. Sift brown sugar and extra cocoa evenly over mixture. Then gently pour boiling water evenly over mixture.
  6. Cook, covered on high for about 2 ½ hours or until centre is firm.
  7. Remove bowl from cooker. Stand the pudding for 5 minutes before serving.

How to – Thermomix

  1. Grease  the slow cooker bowl.
  2. Add the butter and milk to TM bowl and heat at 100c for 3 minutes  on speed soft. Check that butter has completely melted and allow to cool for about 5 minutes.
  3. Add vanilla, caster sugar, cocoa, flour and egg and mix for 10 seconds  on speed 5. Scrape down bowl and sides and repeat..
  4. Spread the mixture into crockpot.
  5. Sift brown sugar and extra cocoa evenly over mixture. Then gently pour boiling water evenly over mixture.
  6. Cook, covered on high for about 2 ½ hours or until centre is firm.
  7. Remove bowl from cooker. Stand the pudding for 5 minutes before serving.

Serving suggestion… this chocolatey pud is great served hot or warm, dusted with a little sifted icing sugar,  and with cream and/or ice cream.
