Mushroom Lovers Pizza

Serves 1-2

I’m sure I must have told this story before but the first meal I ever made David was pasta in mushroom sauce. It was only weeks later that I learned that mushrooms were his food nemesis. I knew if he’d eaten a whole bowl of mushies, not only had he totally taken one for the team, he must really love me!

Clearly my love of mushrooms must be infectious because David has made friends with mushrooms over the years and provided they’re cooked to his liking, he’ll eat at least as many as me. As much as I love that he loves mushrooms, I’m not so keen on the idea that now I  have to share my favourite pizza! It’s the two cheese combo that makes this pizza extra spesh with the meltiness of the mozzarella and the saltiness of the feta, it’s super tasty.

This recipe has been updates with our favourite two ingredient pizza dough and David’s pick, the addition of some pizza cheese. This pizza is for the lovers and the mushroom lovers – there’s lots to love about this pizza.

Mushroom Lovers' Pizza

Ingredients

FOR THE PIZZA DOUGH

100g natural Greek yoghurt

110g self raising flour

FOR THE PIZZA BASE

2-3 tablespoons of tomato paste

a pinch chilli flakes (optional)

30g baby spinach leaves

200g sliced mushrooms

35g feta, crumbled

75g pizza cheese

How to – Traditional

  1. Preheat the oven to 200C /180C fan-forced.
  2. Mix flour and Greek yogurt together in a bowl. Transfer to a  lightly floured work surface and knead the dough, adding more flour as needed to keep dough from being too sticky, for about 8 to 10 minutes.
  3. Lightly grease a 12-inch pizza pan and spread dough to edges of pan.
  4. Bake for about 5-7 minutes until just golden at the edges. Remove from the oven and carefully flip the base over using a spatula.
  5. Cover the base with tomato paste or pizza sauce and sprinkle with a few chilli flakes, if you fancy.
  6. Make a layer of spinach all over the base. Top with the mushrooms, crumble over the feta and sprinkle over the pizza cheese.
  7. Bake for another 10 minutes or until the cheese has melted.

How to – Thermomix

  1. Preheat the oven to 200C /180C fan-forced.
  2. Add flour and yoghurt to TM bowl and mix for 6 seconds  on speed 6. 
  3. Set the dial to closed lid position and knead for 1 minute  on interval speed.
  4. Turn out onto a lightly floured board and roll out into a pizza shape.
  5. Lightly grease a 12-inch pizza pan and spread dough to edges of pan.
  6. Bake for about 5-7 minutes until just golden at the edges. Remove from the oven and carefully flip the base over using a spatula.
  7. Cover the base with tomato paste or pizza sauce and sprinkle with a few chilli flakes, if you fancy.
