This festive Hedgehog Slice is for life, not just for Christmas! 

Hedgehog slice is one of my favourite things. It’s  kind of a cross between fudge and a rocky road, only heaps simpler. Hedgehog slice is a big slab of old school deliciousness, especially this version with a festive twist.

This festive hedgehog is full of the colours of Christmas, red, green and white and the hardest thing about it is stopping at just one piece because truly it’s totally irresistible! 

This recipe is super versatile, I like to use a mix of dark and milk chocolate for a slightly sweeter slice! I tried to cover all my bases, so I’ve included the Thermomix and the stove top version, so no one needs to miss out!

Ingredients

1 can (395g) sweetened  condensed milk

400g dark eating chocolate, broken into pieces

150g Marie biscuits, chopped coarsely

70g dried cranberries

70g pistachios

How to – Traditional

  1. Grease 8cm x 26cm  (3 ¼ inch x 10 inch) bar cake pan; line base and sides with baking paper, extending paper 5cm (2 inches) above long sides.
  2. Combine condensed milk and chocolate in small saucepan; stir over low heat until smooth.
  3. Place biscuit pieces  in large bowl with cranberries and pistachios; add chocolate mixture, stir to combine.
  4.  Spread mixture into pan, cover; refrigerate about 4 hours or until firm. Remove from pan and cut into squares.

How to – Thermomix

  1. Grease 8cm x 26cm  (3 ¼ inch x 10 inch) bar cake pan; line base and sides with baking paper, extending paper 5cm (2 inches) above long sides.
  2. Chop biscuits for 3 seconds  on speed 4. Set aside.
  3. Combine chocolate and  condensed milk in TM bowl for 3 minutes at 60 degrees on speed 3  or until chocolate has completely melted.
  4. Add biscuit pieces, cranberries and pistachios and combine for 20 seconds on reverse speed 3 using the spatula to assist.
  5.  Spread mixture into pan, cover and refrigerate about 4 hours or until firm. Remove from pan and cut into squares.
