Chewy M&M Cookie Bites

Makes about 18 squares

Once upon a time I found a lonely pack of  pink and white M&Ms at the back of the cupboard that were almost past their best by date! Chocolate has a short life expectancy in this house so I still don’t know quite how this happened. It’s almost  a crime against chocolate. However,  I was determined to put that bag of candy to very good use and put them to good use I did, with these yummy cookie bites. M&Ms are so versatile and so delicious, you will be spoilt for choice for recipes on the interwebs but these cookie bites are quick, easy and super yum. And just for the record, these pink and white M&Ms  are berry-licious! Caring is sharing, I know, so I’ve included the regular recipe and the Thermomix conversion. Unleash you inner cookie monster!

Ingredients

275 g flour

1/2 teaspoon salt

1/2 teaspoon bicarbonate of soda

170g butter

200g brown sugar

100g white sugar

2 teaspoons vanilla extract

1 egg

1 egg yolk

200g bag M&Ms

How to – Conventional

  1. Heat oven to 160C. Grease a  18cm x 22cm pan and line with baking paper so that the paper just hangs out over the side. (This will make it much easier to remove the cookie bar later!)
  2. Melt the butter and allow to cool slightly.
  3. In a medium sized bowl, mix the flour, salt and bicarb and set aside.
  4. In a large bowl, whisk the melted butter and the sugars until combined. Add the egg, egg yolk and vanilla and mix well.
  5. Use a rubber spatula to fold the dry ingredients into the egg mixture until just combined. Don’t over mix!
  6. Gently fold  half the M&Ms into the batter and then turn it into the prepared pan smoothing the top with the spatula.
  7. Sprinkle the remaining M&Ms on top and gently press them down.
  8. Bake for 25-30 minutes until the cookie bar is light golden brown, slightly firm to the touch and starting to pull away from the sides of the pan.
  9. Allow to cool completely before cutting into squares.

How to – Thermomix

  1. Heat oven to 160C. Grease a  18cm x 22cm pan and line with baking paper so that the paper just hangs out over the side. (This will make it much easier to remove the cookie bar later!)
  2. Add the flour, bicarb and salt to the TM bowl and mix on speed 6  for 10 seconds. Set aside.
  3. Add the butter to the TM bowl and melt for 3 minutes  on 6o degrees  on speed 1.
  4. Allow the butter to cool slightly. Add the sugar  to TM bowl and mix on speed 4 for  10 seconds. 
  5. Add the egg, the egg yolk and vanilla and mix for 10 seconds on speed 4.
  6. Add the flour. salt and bicarbonate of soda and mix for 10 seconds on speed 4, scraping down the bowl half way through.
  7. Add half  the M&Ms. Mix for 10 seconds on reverse  speed 3 using the spatula to assist. Transfer the mixture to the prepared pan, smoothing the top with a spatula.
  8. Sprinkle the remaining M&Ms on top and gently press them down.
  9. Bake for 25-30 minutes until the cookie bar is light golden brown, slightly firm to the touch and starting to pull away from the sides of the pan.
  10. Allow to cool completely before cutting into squares.

TIP! Try adding a variety of M&Ms, some chocolate melts or some cocoa for  chunkier and more chocolatey cookie bites!
