Choc Chip Chinese Chews

Makes about 24 squares

This is an oldie but a goodie. It’s one of those bakes that you can magic up at a moments notice because it’s quick, easy and the ingredients list is full of pantry staples.

Traditionally Chinese Chews are made with dates and nuts, but of course, I added some choc chips because even a recipe as good as this tastes better with CHOCOLATE! Feel free to give the chocolate a miss, if you so desire.

Although I converted this recipe to the Thermomix,  it’s so easy, all you need is a bowl and a spoon!

Ingredients 

150g (1 cup) plain flour

100g  sugar

pinch of salt

1 teaspoon baking powder

160g (1 cup) dates, chopped

60g (1/2 cup) walnuts

2 eggs, lightly beaten

125g butter, melted

70g dark chocolate chips

How to – Traditional

    1. Heat oven to 180C / 160C fan-forced. Line a shallow 20cm square tin with baking paper.
    2. Combine all the dry ingredients in a large bowl and add the dates and walnuts.
    3. Stir in the eggs and melted butter and mix well.
    4. Gently stir through the chocolate chips.
    5. Spoon the mixture into the tin and smooth the surface.
    6. Bake for about 25 minutes until firm on top.
    7. Cool in the tin before cutting into small squares.

How to – Thermomix

    1. Heat oven to 180C / 160C fan-forced. Line a shallow 20cm square tin with baking paper.
    2. Chop dates on speed 6 for 5 seconds. Set aside.
    3. Place sugar, salt, flour and baking powder into TM bowl and combine for 5 seconds  on speed 5. Set aside.
    4. Place butter in TM bowl and melt for 2 minutes  at 60 degrees on speed 2. Allow to cool for 5 minutes
    5. Add eggs and mix for 5 seconds on speed 4.
    6. Add the flour, salt, baking powder  and sugar and mix for 10 seconds on reverse speed 4.
    7. Add the nuts, dates and choc chips and mix for 10 seconds on speed 2.
    8. Spoon the mixture into the tin and smooth the surface.
    9. Bake for about 25 minutes until firm on top.
    10. Cool in the tin before cutting into small squares.
