
Mix and munch it’s the first of the month which means it’s time to join Sherry and friends for the September edition of In My Kitchen. August was a busy month in the kitchen and here’s a little recap.
I had such delicious fun working on this Bakewell Traybake recipe and can’t wait to post the recipe soon.

I’ve bookmarked so many recipes I want to try from @emthenutritionist’s new cookbook Live To Eat. Last month, we tried the Smashed Cucumber Greek Salad and this month it was the Butter Bean and Jalapeno Hummus – possibly our favourite hummus ever. Big call I know!

On the blog, I shared the recipe for this Apple, Cinnamon and Banana Bread and my Thermomix Leek and Potato Soup recipe got an extreme makeover.

August was definitely the month of the salad at our place. In an effort to at least appear organised, I had a go at meal prepping some lunches with this Joe Wicks Caprese Salad. Full of protein, full of yum and really easy to chuck together – I think this will be a regular feature on our lunch table.

I made a tuna and green bean salad which appeared on the meal planner more than once. We also really enjoyed this Tortilla Chip Salad from the Mob One Cookbook which my MIL gifted me for Christmas. It doesn’t look like much but it was bursting with flavour.

The allotments of my friends and neighbours were very bountiful this month and I was on the receiving end of some fantastic produce. We had new potatoes, baby plums, rhubarb, zucchinis and green beans too!

Talking of the fruits (and vegetables) of my neighbours’ labour, can we take a minute to appreciate this zucchini that was as big as my arm?! I have so much zucchini, I literally do not know what to do with it so if you have any ideas, I’m all ears!

I have had so much zucchini that I whipped up multiple batches of this zucchini relish – it’s a bit like Piccalilli. My friends and neighbours have been loving it! Us too!

My dear friend (also) Sam came to stay and we went blackberry picking plus bonus, my ex-neighbour let me pick yellow raspberries from her allotment. They’re so deliciously sweet. We also scored some cooking apples straight from the tree. Then we came home and made an Apple and Blackberry Crumble – Sam said it was the best crumble she’d ever eaten!

We had a public holiday at the end of the month and the weather was absolutely glorious. Our neighbours invited us over for a barbecue and I made a trifle with all my foraged fruit and the excess birthday cake that I found in the freezer. It was so delicious.

Once again, I borrowed my neighbour’s trifle bowl as I don’t really have enough space to store one of my own. Isn’t it a beaut?! I did however, manage to find space for these autumnal dish cloths that I found in Primark. I could not resist!

I hate wasting food so I upcycled the little bit of cream I had left over from my trifle making to whip up these teeny tiny lime possets. My dear friend Heather gifted me these little cups a while back and it was such a joy to finally use them! I served the posset with a homemade ginger crisp biscuit, so good!

Last but not least, after weeks of waiting, I finally got my hands on @dominthekitchen’s book, Upside Down Cooking. I’m very excited!
