
I welcomed September with open arms – I was so ready for cooler weather, cosy nights and all my autumn adornments. I wasn’t quite as enthusiastic about the shorter days – taking a decent photo of dinner will be almost impossible from here on in, LOL! All in all, September was a delicious month and I’m here to tell you all about it. I’m joining up with Sherry and friends for the September edition of In My Kitchen.
We had some really fun nights hosting friends in the kitchen – it really is the heart of our home. Having our friends over for dinner was the perfect excuse to make these delightful margarita possets. They were so easy and so delicious that our friends decided to make them to take to friends they were visiting the following day. I served the posset with some homemade ginger snaps – so good! I didn’t have appropriate serving dishes so once again, my neighbours came to the rescue lending me these gorgeous 1950’s glasses – they were just perfect for my posset.

I continued to work my way through my glut of zucchini. I was able to take some new pics and update the recipe for this Zucchini and Basil Soup which was souper light (see what I did there?) and very delicious. I still have two enormo zucchinis left so if you have any more ideas on what to do with them, I’m all ears!

Talking of zucchini, I made a truckload of zucchini relish and off loaded it onto all my friends and neighbours. It’s been very popular, I must say!

Most of the zucchini, I’ve had are enormous and they’re best used in soups and relishes because they have a high water content and really big seeds but my neighbour gave me some small zucchini and I made a gorgeous green (with a bit of yellow) risotto. Even David who is very anti-rice enjoyed it!

One perk of posting recipes more frequently is that we get a much more varied menu at home and it’s something David and I have both noticed and appreciated. This Green Bean and Tuna Salad has been on high rotation – it’s packed with protein and is so tasty!

Keeping with the theme of beans in salads, we’ve also been loving this Tortilla Chip Fiesta Salad. I am very much in my beans in salads era – I think adding the beans makes a standard salad feel more so much more substantial, don’t you agree?

I finally shared the recipe for the Plum Crumble Cake I made after my neighbour gave me a massive bag of plums. It’s plummy yummy!

I didn’t get around to make Teddy Roosevelt a cake for his birthday in July so I made him a cake for his Gotcha Day instead. He’s brought us so much joy the last six years and has really completed our little family so I’m pleased he got to have his own cake and eat it and share it with his furry friends! This homemade dog cake is made with all human ingredients and people could eat it if they so desired although I think it would be a bit bland!

We had our Ukraninan neighbours over for drinks and nibbles and Elena made this epic caramel cake. It was very rich but incredibly light as the cake is made up of wafer layers – so delicious (and yes, you can see more magarita posset in the background, LOL!)

I was too busy hosting to take a picture of the table topped with platters and ‘picky bits.’ However, I did snap a pic of these Gougeres AKA cheese puffs. They’re kind of like a cheesy, savoury profiterole and they were a huge hit with our guests. It was my first time making them but it won’t be my last!

I didn’t waste any time putting up my Autumn decorations – I am so ready for cosy season. There wasn’t much autumn bits left at TKMaxx by the time I got there but don’t worry I didn’t leave empty handed, I brought these autumn napkins and tea towels home with me. How cute are those corgis?!

I hadn’t seen my hairdresser for some time as she’d broken her arm so when we finally rescheduled my appointment, I took her a belated birthday cake. It was this simple chocolate sponge with some ganache but it went down a treat!

At the start of the month, I downloaded @emthenutritionist ‘s Ebook ‘Eating Well on a Budget’ and we have been loving the recipes so much. The Peanut Butter and Jelly overnight oats have been on high rotation and we love the 5 a day tuna prep mix especially when it’s stuffed in some pita. Em’s recipes are simple but delicious and being healthy has never tasted so good!
