Holidays End

As stoved off as the city was on Saturday, is as quiet as it is today. It’s like a ghost town and eerily silent. But who am I to complain? I have almost a whole train carriage to myself and there’s no queue for coffee at the one coffee shop that’s open. Even my short cut through the shopping centre is a lone voyage, there’s simply no bodies about, and on the down side, neither are there any shops open! Lucky, David and I do a BYO (Bring Your Own) Lunch – lots of lovely leftovers; chips, dips and a whole heap of healthy crudites!

Being back at work is great but all us in-betweeners are pretty mellow. My students are a hardy bunch and they’re all in today – it’s great to see them and the day passes super quick. Time really does fly when you’re having fun.

I’m planning on attaching myself to the sofa tonight, after running myself ragged at Basic Training and then baking a cake, but David remembers we have plans tonight! Aargh! If I eat and drink anymore I’m sure to go POP, and even if I don’t, the buttons on my clothes certainly will!

In a dodgy priority shuffle, I decide to ditch gym and bake the cake instead, and still, manage to meet my wining and dining obligations. I know that energy wise, this is a bad move, because I know, the more I exercise, the better I feel but I kid myself into thinking that I need to save myself for my personal training with Kathy tomorrow!

I can’t wait to make the Apricot Sour Cream Cake and give my new silicone bundt tin a run for it’s money. I’ve made other varieties of sour cream cakes before, and love them to bits, for their simplicity and lovely, light texture. Making the cake is a doddle but I’m a bit of a keen bean in getting it out of the tin. Patience has never been one of my strong points and as I try to oust it from the tin to let it cool, half of it gets left behind! Pants! I guess that’s the way the cake crumbles! Or at least mine does, any rate! It looks like it’s just been hit by something that measures on the Richter scale but man, it tastes good. Although I can salvage enough to make a complete oval-ish shape, albeit in two pieces, it’s not neat enough to ice, which I am pretty devestated about but I console myself thinking of all the calories I’ve saved the participants of the Feeder Programme. I’m definitely going to give it another go… what’s that old adage, “if at first you don’t succeed, try again!”

So I bake cakes, take the hoover on tour around the apartment and then still find time in my busy schedule to duck out for dinner with friends! Never a dull moment!
