Easy Banana Bread

Serves 8-10

I found this recipe on the back of a flour packet. In the olden days, I made this with my trusty food processor, but I’ve since updated it and whizzed up a Thermomix conversion. Whichever way you make it, it will be delicious! Go bananas!

Ingredients

  • 185g unsalted butter, softened
  • 1 cup (175g) brown sugar
  • ½ cup (110g) caster sugar (or raw sugar, if using a Thermomix)
  • 3 eggs
  • 2 cups (300g) self-raising flour
  • ½ teaspoon baking powder
  • ½ teaspoon  cinnamon
  • 3 small bananas

How to – Traditional

  1. Preheat oven to 170ºC (fan forced). Lightly grease and line a 26cm x 15cm loaf tin with baking paper.
  2. Mash the bananas.
  3. Place butter, sugars and eggs in the bowl of a food processor and process until well combined.
  4. Add the flour, baking powder, cinnamon and bananas and process until smooth.
  5. Spoon into prepared tin and bake for about an hour and five minutes or until cooked when tested with a skewer.

How to – Thermomix

  1. Preheat oven to 170ºC (fan forced). Lightly grease and line a 26cm x 15cm loaf tin with baking paper.
  2. If using raw sugar, mill for 10 seconds on speed 9.
  3. Add the brown sugar and butter to the TM bowl and mix for 2o seconds on speed 4.
  4. With the blades running on speed 3, add the eggs one at a time through the hole in the lid. This should take about 30 seconds. 
  5. Add the banana and mix for 5 seconds on speed 4. 
  6. Add flour, cinnamon and baking powder and mix for 3o seconds  on reverse speed 6. Scrape down sides and base of TM bowl half way through.
  7. Spoon into prepared tin and bake for about an hour and five minutes or until cooked when tested with a skewer.
