Oven Baked Herb Fish

Serves 4

I love this recipe because it’s as delicious as colourful and contains so many of my favourite things. Besides who doesn’t love a delicious one-dish dinner? This is full of goodness and a real taste of the Mediterranean!

Ingredients

1 medium red onion, roughly chopped

1 large red capsicum, roughly chopped

1 medium lemon

250g cherry tomatoes

½ cup (50g) seeded kalamata olives

½ cup (125 ml) dry white wine

40ml  olive oil

¾ cup loosely packed fresh  oregano leaves

4 x 200g skinless firm white fish fillets (I like to use barramundi)

¼ cup (40g) pine nuts

How to

  1. Preheat oven to 220C/200C fan-forced.
  2. Thinly peel rind from lemon, removing any white pith. Juice the  lemon.
  3. Mix onion, capsicum,  lemon rind, lemon juice, tomatoes, olives, wine, oil and half the oregano in a large shallow baking dish and season. Top with the fish and cover dish with foil. Cook for about 15 minutes.
  4. Remove the foil and sprinkle the pine nuts over the dish. Return to the oven and  cook, uncovered, for about 10 minutes or until the fish is cooked. Sprinkle with remaining oregano.
