Meatless Mondays

Ever since we watched the thought provoking Forks Over Knives, we’ve been consciously trying to eat less meat and more vegetarian dinners. It just makes honest to goodness wholefood sense. What’s more, Santa bought me a copy of  Eat and Run which is the awe inspiring story of one man, Steve Jurek,  an ultra marathoner and vegan. His running record is really something to behold and his recipes are made to make even the most hardcore carnivore’s mouth water. Then there’s the January Body Springclean Challenge. We’re enjoying eating better, and it’s really rather refreshing to eat a plant based wholefood dinner at least once a week and long may our good habits last because it would be a shame to run out of steam at the end of the month.

Meat free dinners have the advantage of being cheap, tasty and really good for you. I love them so much, I have decided  to share a meat free recipe  every Monday of every week. I’m going to try and go one step further, and make them not only meat free, but plant based and where possible, whole food. This will be a challenge but I’ll try my best. I can’t tell you what’s on the menu, but I can promise  you  that all the recipes will be tried, tested and tasty!
