
Gosh, this year is flying by. I can’t believe it’s birthday month already and time to join Sherry and friends for this month’s edition of In My Kitchen. June flew by in the blink if an eye and I spent half the month operating with my right hand only as the left one was recovering from trigger finger surgery.
Knowing that surgery was imminent, I really tried to up the ante with my recipe posts and posted not one but two recipes in June. I don’t even know who I am anymore! First up was the one tray wonder that is this Honey Mustard Chicken Traybake. I love it because it’s easy, delicious and there’s only one pan to wash up!

I also finally shared the recipe for my dear friend Anthea’s prize winning shortbread. By golly, it’s delicious!

We added a few of bits to our Country Traditionals crockery set – two side plates and two dinner plates with two new patterns – Love Leaf and Blue Hen. It’s such a joy to eat off them.

Despite it being the first month of summer, there was definitely plenty of what I would call ‘soup weather.’ I thanked my past self for making some of Recipe Tin’s wontons which I threw together with some itsu broth and noodles and topped with broccolini for Wonton Soup – so good! I love Nagi’s recipes so much.

I also made JB’s 20 minute Laksa from Nagi’s Dinner cookbook. It was restaurant quality good – so spicy but nicey!

My other celebrity crush is Joe Wicks and we tried his Banging Burger Bowl – which is basically a deconstructed chopped salad with some savoury mince but the hero of the dish is the sauce, it’s soooo good. It tastes a lot like a Big Mac sauce but more flavoursome. I think this dish will be on high rotation this summer.

I invited my foodie neighbour Tim round for a pot sticker masterclass. We made a massive stash of pot stickers, then invited our respective spouses to join us, cooked them up and enjoyed them for lunch. No pictures of the cooked dumplings unfortunately, they were devoured that quickly! Pot stickers really are so easy to make when you know how.

My spice rack is finally complete – although I do still have some emergency storage on the top rack should I need it. I promise you it’s straight in real life, I am just the world’s wonkiest photographer!

The only thing I didn’t love about the spice situation was that my measuring teaspoon did not fit inside the jars so I invested in these magnetic dual sided measuring spoons which are magnetic, stackable and praise be, they fit in my spice jars! Bonus points that the set included a leveler! I’m going to be so precise, I won’t even know myself!

Anyhoo, typing one handed is not for the faint hearted so I’ll leave it there, LOL! Tell me what’s been going down in your kitchen. I’m all ears!
