Pea Corn and Bacon Frittata

Serves 4

This frittata is tasty, quick and has only four ingredients! What’s not to love?! This is perfect for an easy lunch or dinner and tastes great cold too! I’ve updated the recipe and added the Thermomix conversion too. Enjoy!

Ingredients

150g bacon (about 3 slices), roughly chopped

8 eggs

1 ½ cups (225g) frozen peas and corn

¼  cup (60ml) milk

How to – Traditional

  1. Heat oven to 180C/160C fan-forced. Line a baking dish with baking paper.
  2. Cook bacon in  a heated oiled medium frying pan until crispy. Remove the bacon from the pan and set aside.
  3. Lightly beat  the eggs in a large bowl, stir in the veggies and milk and season well.
  4. Pour the egg and veggies into the prepared dish and top with the chopped bacon.
  5. Bake for about 25 minutes or until set. Be careful not to overcook otherwise your frittata will be dry instead of fluffy.

How to – Thermomix

  1. Cook bacon in  a heated oiled medium frying pan until crispy. Remove the bacon from the pan and set aside.
  2. Add  the eggs and milk to TM bowl and mix on speed 4  for 5 seconds.
  3. Add the veggies and season well. Mix on reverse speed 3  for 5 seconds using the spatula to assist.
  4. Pour the egg and veggies into the prepared dish and top with the chopped bacon.
  5. Bake for about 25 minutes or until set. Be careful not to overcook otherwise your frittata will be dry instead of fluffy.

Prep time and Cooking time: 30 minutes

Note: If your prefer, you can cook your frittata in the pan and finish it under the grill. At the end of step 3, simply, heat the same cleaned frying pan over a medium heat, add  the egg mixture; top with bacon, and cook over a low heat  for about 10 minutes or until the base sets. Preheat the grill and grill the frittata for about 2 minutes until brown and golden. If your frying pan is like mine, and doesn’t have a heatproof handle, just wrap the handle in several layers of foil to protect it during grilling.
