Chocolate Shortbread Stars

Makes 25

Great cookies for Christmas! You can find the Thermomix conversion for these superstars here.

Ingredients

250g unsalted  butter, softened

1 cup (160g) icing sugar

1 ¼ cups (185g) plain flour

½  cup (100g) rice flour

¼ cup (25g) cocoa powder

60g (125) dark choc bits

2 tablespoons icing sugar, extra

 

How to

  1. Beat butter and sugar in a bowl with electric mixer until light and fluffy. Stir in sifted flours and cocoa, in two batches. Knead on a floured surface until smooth. Roll dough between sheets of baking paper until 1cm thick; refrigerate 30 minutes.
  2. Preheat oven to 160 C (140 C fan-forced) . Grease  two oven trays;  line with baking paper.
  3. Cut 25 x 6.5cm stars from dough. Place 4cm apart on baking trays. Decorate with Choc Bits; 1 Choc Bit in each point of the star.
  4. Bake stars 20 minutes; cool on trays. Dust stars with extra sifted icing sugar.
