Serves 4-6

One of the things I love most about summer in Australia is mangoes. I just can’t get enough of them. I often think summer should change it’s name by deed poll to “Mango Season,” I think it has a lovely ring to it, don’t you?! The only sad thing about mango season is that it’s just too short, but lately, I’ve taken to buying frozen mango from Aldi so I can enjoy all the mango treats all year round. And just like I say it’s never too hot to eat soup, I stand by my similar theory that it’s never too cold to eat ice cream.

Now, it’s no secret that I’m mad about ice cream and frozen desserts in general, although I have to admit, they’re treat foods and for me at least, are a special day food rather than an everyday food. If regular ice cream is a treat food, then think of this dessert as a cheat treat, because it’s fast, fresh, simple, totally delicious, relatively healthy and has only four ingredients.

I use frozen fruit in this recipe, but if you have fresh fruit you want to use up, just chop it up, put it in a container and freeze for 2-3 hours before you want to whip this up and you’ll be good to go. I don’t have a sweet tooth because all my teeth are sweet, so I like the added honey but feel free to add a bit more or a bit less or just skip it altogether!

Ingredients

2 frozen bananas, (about 200g) peeled and chopped

300g frozen mango pieces, peeled and chopped

1 cup (280g) thick natural or vanilla yoghurt

1 teaspoon of honey

How to – Traditional

  1. Place the frozen fruit, yoghurt and honey in a food processor or blender and blend until smooth.
  2. The gelato is best served immediately but can be placed in a sealed container and freeze.
  3. After freezing allow to soften for at least 10-20 minutes before serving.

How to – Thermomix

  1. Add mango, banana and honey to TM bowl and blitz for 10 seconds  on speed 10.
  2. Add the yoghurt and mix for 30 seconds on speed 9. Scrape down lid and sides of bowl. Mix again for another 30 seconds on speed 9.
  3. The gelato is best served immediately but can be placed in a sealed container and freeze.
  4. After freezing allow to soften for at least 10-20 minutes before serving.
