4 medium mangoes
2 tablespoons light brown sugar
- Preheat grill.
- Slice cheeks from mangoes and score each cheek in a criss-cross pattern. Place scored-side-up on oven tray.
- Finely grate 2 teaspoons rind from lime. Squeeze juice from lime (you need about 1 tablespoon juice). Combine rind, juice and sugar in small bowl and then drizzle over mango cheeks.
- Grill until sugar caramelises. Serve with natural yoghurt if desired.
