Pea and Ricotta Frittata

Pea and Ricotta Frittata title

serves 8

This frittata is fantastic –  not least becuase it has only four ingredients! This frittata is all about choice, you can cook your peas in the microwave or on the stove and you can mix it up in a bowl or in the Thermomix. Best of all, you can eat the frittata hot, warm or at room temperature. However you make it, and however you eat it, it’s going to be delicious.

If you make it in advance,  cut it just before serving so it doesn’t dry out. Nom, nom!
