This frittata is fantastic –  not least becuase it has only four ingredients!

This frittata is all about choice, you can cook your peas in the microwave or on the stove and you can mix it up in a bowl or in the Thermomix.

Best of all, you can eat the frittata hot, warm or at room temperature. However you make it, and however you eat it, it’s going to be delicious.

If you make it in advance,  cut it just before serving so it doesn’t dry out. Nom, nom!

Ingredients

180g frozen peas

6 eggs

2 tablespoons sour cream

250g ricotta cheese

How to – Traditional

  1. Preheat oven to 200 C/180C fan-forced.
  2. Cook peas in microwave or on stove and drain.
  3. Combine peas, eggs, sour cream, in a large bowl and season well.
  4. Heat oiled 25cm (10-inch) ovenproof frying pan; add the egg mixture. Cook on a medium low heat until the base is set, then transfer the pan to oven.
  5. Bake frittata for about 10 minutes or until set and browned lightly.
  6. Top the frittata with remaining cheese and place under preheated grill until the cheese is melted slightly. Serve frittata cut into wedges.

How to – Thermomix

  1. Preheat oven to 200 C/180C fan-forced.
  2. Cook peas in microwave or on stove and drain.
  3. Combine peas, eggs, sour cream, in TM bowl and mix for 10 seconds  on reverse speed 5.
  4. Heat oiled 25cm (10-inch) ovenproof frying pan; add the egg mixture. Cook on a medium low heat until the base is set, then transfer the pan to oven.
  5. Bake frittata for about 10 minutes or until set and browned lightly.
  6. Top the frittata with remaining cheese and place under preheated grill until the cheese is melted slightly. Serve frittata cut into wedges with a side of salad leaves.

TIP! For this recipe, you need a frying pan that can go into the oven.
