No Bake Biscuit Fudge Slice

You just need a handful of pantry staples to whip up this no bake fudgy chocolatey biscuit slice!

I think I found this recipe in an old magazine. It’s one of those totally old skool recipes that really has stood the test of time. This is so quick and easy to make and it’s like a budget friendly Hedgehog Slice! I’ve since updated the recipe with a Thermomix conversion and some new pics.

This slice came to be after I’d made this Hedgehog Slice and was wondering what to make with the left over biscuits because I don’t know about you but if I’m going to eat a biscuit, a plain old Marie is just not going to cut it!

Since I got back from my recent trip to the UK, I have been so jet lagged. I struggle to keep my eyes open by 8pm but at 4am I’m bright eyed and bushy tailed. While jet lag has done little for my energy levels, it’s been great for my early morning baking bonanzas!

This recipe is in fact so quick and easy that I made it one day before work, knowing that by the time I came home, it would be set to perfection. Unlike a regular Hedgehog Slice, this no bake treat doesn’t contain chocolate or condensed milk making it a delicious but economical alternative and perfect for when you have a Mother Hubbard moment, that is, when you have eaten all the chocolate. Or is that just me?!

If you want to make this nut free or prefer your slice on the chewy side, simply swap out the nuts for sultanas and mix things up using different types of biscuits. This recipe is very forgiving!

Ingredients

450g plain biscuits, chopped coarsely

180g unsalted butter, chopped

180g caster sugar

1 cup (120g) walnuts, toasted, finely chopped

1/3 cup (80ml) milk

2 tablespoons cocoa, sifted

2 teaspoons vanilla extract

How to – Traditional

    1. Lightly grease a 20cm square cake pan. Line with baking paper, extending paper 5cm (2 inches) above rim at long ends.
    2. Crush biscuits in a plastic bag with a rolling pin or place in a food processor or Thermomix and blitz until you have small chunks. Transfer to a large bowl.
    3. Place butter, sugar, milk, cocoa and vanilla in a  pan on medium heat. Cook for 3-4 minutes until butter has melted and ingredients are combined. Add butter mixture to biscuits. Add the walnuts and stir until combined.
    4.  Press mixture into prepared pan. Cover and chill for 4 hours, until firm. Remove from pan. Cut into squares.

How to – Thermomix

    1. Lightly grease a 20cm square cake pan. Line with baking paper, extending paper 5cm (2 inches) above rim at long ends.
    2. Place walnuts in TM bowl and roast for 4 minutes on Varoma speed 1. Set aside.
    3. Place biscuits in TM bowl and chop for 3 seconds  on speed 4. Set aside with walnuts.
    4. Place butter, sugar, milk, cocoa and vanilla in TM bowl and heat for 3 minutes at 60 degrees on speed 2.
    5. Add biscuit and walnut chunks and combine for 15 seconds on reverse speed 2  or until mixture is combined and everything is covered in chocolate.
    6. Press mixture into prepared pan. Cover and chill for 4 hours, until firm. Remove from pan. Cut into squares.
