I can’t wait to race home from work and get into a bit of baking. Tonight, I’m going to try and break my bad bundt karma with Donna Hay’s Lemon and Yoghurt Cake. The cake is easy peasy, lemon squeezy! (Excuse the pun!) I make it in minutes. I haven’t got a good track record with my bundt tin so I’m not overly hopeful about my bundt success today!
I take extra special care greasing the bundt and then sprinkle some flour all around before I pour in the mixture, to be sure, to be sure! The cake takes a bit longer than Donna recommends but it’s looking lovely. I give it 5 minutes before I cross my fingers, hope for the best and turn it out. I can hardly bear to look! So I don’t! Eventually, I check the tin, and only when I realise it’s clean, do I allow myself a sneak peek at the plate!
My bundt looks beautiful. A bit burnt but beautiful! You can’t have everything, hey? Once it’s drizzled with that icing, it looks like a big bundt shaped piece of lemon heaven!
