I’m on a mission to use up all my leftover ingredients this week, which makes for a five day baking bonanza! So much for keeping out of the kitchen!
I’ve got yoghurt in the fridge which will be the hero of Donna Hay’s Lemon and Yoghurt Cake. Following my weekend exploits with the Kumara and Polenta Sour Cream Muffins, there’s still some sour cream taking up space in the fridge, so that will do nicely for my Chocolate Fudge Cake tomorrow. And that’s not all, there’s half a pack of amaretti biscuits in the larder, and it would be criminal to let them go to waste! Besides, Tracey went to a lot of effort to purchase those little bites of Italy for me, so it’s only fair, she gets to taste the fruits of her labours! So one Apricot and Amaretti Cake coming up.
