Chilli Chicken Stir Fry

Serves 4

This is fast and full of flavour. The lime, soy sauce and sweet chilli  work so well together giving this stir fry a sweet, citrusy kick!


2 tablespoons  vegetable oil

2 tablespoons soy sauce

1 tablespoon lime juice

2 tablespoons sweet chilli sauce

1 teaspoon  soy sauce

400g  chicken breast, sliced thinly

150g green beans, trimmed and halved

1 red onion, roughly chopped

2 garlic cloves, crushed

Steamed rice, to serve


How to

  1. Combine the soy sauce, sweet chilli sauce and lime juice in a small jug.
  2. Heat 1 tablespoon of oil in a wok or large frying pan.
  3. Season the chicken and toss with a teaspoon of  soy sauce. Stir fry  the chicken for 2-3 minutes, until sealed. Remove the chicken from the wok.
  4. Heat the remaining oil in the same wok on a high heat. Cook onion, garlic and beans for 2-3 minutes, until just tender. Add the chicken and sweet chilli mix, and stir-fry for 3 minutes, until  the sauce has thickened and chicken is just cooked through.
  5. Serve with rice.
