Thermomix Carrot and Coriander Soup

Thermomix Carrot and Coriander SoupServes 4


1 tablespoon rice or lentils

1 teaspoon sugar

1 piece lemon or orange rind

2cm square fresh ginger, roughly chopped

250g-350g carrots, peeled and roughly chopped

1 small red onion, peeled and halved

300ml water with 1-2 tablespoons of  Thermomix Vegetable Stock Concentrate)

300g milk

Salt and freshly ground pepper

50g butter

1 good size sprig of coriander


How to

  1. Place rice or lentils, sugar, rind and ginger into  TM bowl and grind for 10-20 seconds on speed 9.
  2. Add carrots and onion and chop for 5 seconds  on speed 7.
  3. Add stock, milk, salt, pepper, butter and coriander. Mix for a few seconds on speed 6 to combine and cook for 12 minutes at 100C on speed 1.
  4. Blend for 30 seconds by slowly going from speed 1  to speed 9.

TIP! Use a little less water/milk if you prefer a thicker soup.
