Impress in just 30 minutes!
1 white onions, cut into wedges
2 large red capsicums (peppers), cut into thick strips
2 large carrots, thickly sliced
2 cloves garlic, crushed
2 tablespoons olive oil
1 tablespoon fennel seeds
500g firm white fish fillets, chopped
1/3 cup slivered almonds
- Preheat oven to 200 C/180 C fan forced.
- Combine vegetables, garlic, olive oil and fennel seeds in large roasting pan. Bake for 15 minutes.
- Stir in fish and scatter over almonds.
- Bake for another 15-20 minutes, until vegetables are tender and fish is cooked through.
- Serve with steamed rice.
