Fish Capsicum and Almond Bake

Serves 4

Impress in just 30 minutes!


1 white onions, cut into wedges

2 large red capsicums (peppers), cut into thick strips

2 large carrots, thickly sliced

2 cloves garlic, crushed

2 tablespoons olive oil

1 tablespoon fennel seeds

500g firm white fish fillets, chopped

1/3 cup slivered almonds


How to

  1. Preheat oven to 200 C/180 C fan forced.
  2. Combine vegetables, garlic, olive oil and fennel seeds in large roasting pan. Bake for 15 minutes.
  3. Stir in fish and scatter over almonds.
  4. Bake for another 15-20 minutes, until vegetables are tender and fish is cooked through.
  5. Serve with steamed rice.
