Makes 24 squares
This White Chocolate and Raspberry Rocky Road has just 5 ingredients and is as colour co-ordinated as it is delicious!
200g shortbread biscuits, crushed
150g raspberry lollies, quartered
60g mini marshmallows
75g shredded coconut
600g white eating chocolate, melted
- Grease 20cm x 30 cm rectangular pan. Line the base and long sides with baking paper, extending the paper over the sides.
- Combine biscuits, lollies, marshmallows and 60g of the coconut in large bowl.
- Stir in the chocolate.
- Spread mixture into the pan, smooth surface and then sprinkle with the remaining coconut.
- Put in the fridge for 2 hours or until firm. Cut into squares.
Prep and Cooking time: 15 minutes (+refrigeration)
To store… Store Rocky Road in an airtight container in the fridge for up to a week.
