This White Chocolate and Raspberry Rocky Road has just 5 ingredients and is as colour co-ordinated as it is delicious!

Ingredients

200g  shortbread biscuits, crushed

150g raspberry lollies, quartered

60g  mini marshmallows

75g shredded coconut

600g white eating chocolate, melted

How to

  1.  Grease 20cm x 30 cm rectangular pan. Line the base and long sides with baking paper, extending the  paper over the sides.
  2. Combine biscuits, lollies, marshmallows and 60g of the coconut in large bowl.
  3. Stir in the chocolate.
  4. Spread mixture into the pan, smooth surface and then sprinkle with the remaining coconut.
  5. Put in the fridge for  2 hours or until firm. Cut into squares.
