No Bake Toblerone Cheesecake

Serves 6 – 8

This is cheesecake is the ultimate decadent dessert and perfect if you want to wish the after dinner boat out. If you don’t have a Thermomix, a food processor will work just as well. I used Simone’s basic recipe and tweaked it to taste, with an extra thick base and a chocolatey topping. It’s super easy, super simple and truly delicious! Best of all, there’s no gelatine, no baking, just slices of chocolatey cheese yumminess! Get stuck in!

Ingredients – Traditional

200g plain chocolate digestives

80g unsalted butter, melted

500g cream cheese

110g raw sugar

300g Toblerone

1 teaspoon vanilla extract

130g thickened cream

How to -Traditional

  1. Lightly grease a 20cm springform cake tin and set aside.
  2. Process biscuits in food processor until fine. Add the butter and process for another 10 seconds until fine.
  3. Press the biscuit mixture into the cake tin and pop into the fridge for about 20 minutes.
  4. Meanwhile, make the filling. Using an electric mixer, beat cream cheese and sugar until smooth.
  5. Melt 200g Toblerone in a bowl over a pot of simmering water or in the microwave in 30 second bursts.
  6. Add the melted Toblerone, vanilla and cream. Mix till well combined.
  7. Pour the mixture over the base and then chill for at least 3 hours before serving.
  8. Add the remaining 100g Toblerone to food processor until fine. Serve topped with the grated Toblerone.

Toblerone Cheesecake

Ingredients – Thermomix

200g plain chocolate digestives

80g unsalted butter

500g cream cheese

110g raw sugar

300g Toblerone

1 teaspoon vanilla extract

130g thickened cream

How to – Thermomix

  1. Lightly grease a 20cm springform cake tin and set aside.
  2. Place butter into TM bowl. Melt for 3 minutes at 50 degrees on speed 3.
  3. Add the biscuits to the TM bowl and blitz for 15 seconds on speed 8 until it looks like fine crumbs. Press the biscuit mixture into the cake tin and pop into the fridge to chill while you make the filling.
  4. Put the sugar into TM bowl and mill for 5 seconds on speed 9. Set aside.
  5. Place 200g Toblerone into the TM bowl and grate for 5 seconds  on speed 7. Melt for 4 minutes at 37 degrees on speed 2.
  6. Add  the cream cheese, cream, vanilla and the sugar and mix for 40 seconds on speed 5 until smooth.
  7. Pour the mixture over the base and then chill for at least 3 hours before serving.
  8. Add the remaining 100g Toblerone to TM bowl and grate for 3 seconds  on speed 8. Serve topped with the grated Toblerone.
