No Bake Halloween Spooky Slice

You don’t need any tricks to make this frightfully tasty no bake Halloween treat!

I have to admit that Halloween is not my favourite holiday – I’m easily scared and extremely squeamish – but the older I get, the more I seem to enjoy the spook-tacular activites.

Anyhoo, it turns out that Teddy Roosevelt is quite a social animal and has a busier social calendar than his pawrents! Just like parents of hooman kids, we spend a lot of our weekends chaperoning Teddy around on the puppy pawty circuit.

He’s already been to one Halloween party and has another one coming up. He also has multiple Halloween outfits, not costumes, because like his pawrents, fancy dress is not his forte!

This year, Teddy’s not the only one who got invited to a Halloween party! We jumped at the chance for a bit of devillish dressing up when Lorraine AKA Not Quite Nigella invited us to her perilous picnic. The fangtastic food she produced really has to be seen to be believed and you can check it all out in this post.

Lorraine asked us to bring a plate. Of course, I left it to the last minute and of course, I had to bring something sweet and this no bake slice ticked all the boxes.

This slice is so easy, even the kids can make it and all you need is a handful of pantry staples. In fact, the trickiest thing about this treat is waiting for the slice to set!

If you haven’t got red writing icing, you can whip up and  drizzle some red glace icing. You don’t need any mad skills to decorate this slice, in fact the messier the red streaks are, the spookier it looks!

There’s a range of lurid lollies you can use to decorate; I found some gummy mummies (Woolies) and some spooky mix (Kmart) but if all else fails, there’s always some squirmy worms! As you can see, the Spooky Mix really caught my eye!

Cuts into 16 squares

Ingredients

350g white chocolate, plus 2 extra squares

50g coconut oil

80g rice bubbles (AKA Rice Krispies)

100g mini marshmallows

20g shredded coconut

red writing icing

spooky sweets, to decorate

How to – Traditional

  1. Grease 20cm x 20cm square pan and line with baking paper.
  2. In a large bowl, mix the rice bubbles, marshmallow and coconut.
  3. Roughly chop the chocolate. Slowly melt the coconut oil and chocolate in a saucepan over a low heat. Allow to cool slightly.
  4. Add the chocolate to the Rice Bubbles mixture, stirring until well combined.
  5. Transfer the mixture into the prepared tray and press down with the back of a spoon. Refrigerate for 2 hours or until firm.
  6. When set, remove the slice from the baking tin and cut into 16 squares.
  7. Decorate the squares with writing icing or use a teaspoon to drizzle red glace icing over each square.
  8. Melt the reserved squares of white chocolate in the microwave in 30 second bursts. Put a blob of white chocolate and each square to stick the spooky sweets. Allow the sweets to set and then serve!

How to – Thermomix

  1. Grease a 20cm x 20cm square pan and line with baking paper.
  2. In a large bowl, add the rice bubbles, coconut and marshmallows.
  3. Add the chocolate to the TM bowl and chop for 5 seconds  on speed 9.
  4. Add the coconut oil to the TM bowl and melt for 3 minutes at 90 degrees on speed 3.
  5. Add the rice bubble mixture to the TM bowl and mix for about 5-10 seconds  on reverse speed 3 or until everything is coated.
  6. Transfer the mixture into the prepared tray and press down with the back of a spoon. Refrigerate for 2 hours or until firm.
  7. When set, remove the slice from the baking tin and cut into 16 squares.
  8. Decorate the squares with writing icing or use a teaspoon to drizzle red glace icing over each square.
