Marmalade Muffins

Packed full of oats, citrus and a zesty marmalade middle – everyone is going to be a-loving these muffins.

Long time readers will know what I am a mad marmalade fan, I love cooking with it as much as I love eating it – have you seen my cooking with marmalade recipe repetoire? It’s pretty extensive!

I think I got my love of marmalade from my nana and my affinity with Paddington Bear.

I spent hours as a child watching Paddington Bear on the telly and weekend mornings at nana’s always included toast (although it was so lightly toasted it was more like warm bread,) slathered in marmalade. The absolute best!

I actually have lost count of how many times I’ve made these muffins but I know it’s a lot. Every time I whip up a batch, I eat so many and share so many that my photo opportunity quickly disappears and I’m like, next time. Because when you try these muffins, there is always a next time.

As these muffins contain oats, yoghurt and marmalade in my opinion, they’re basically a health food and definitely a breakfast food. I like them warm from the oven when the marmalade is sticky and oozy and oh, so good!

These muffins would be such a treat for a muffin loving dad on Father’s Day because not only are they marmaladey moreish but they’re so simple to whip up, even the kids can do it. They are so quick and easy, it would be almost rude not to make them!

I should warn you though, these muffins are highly addictive… Paddington (and nana) would definitely approve!

Makes 9 large muffins

Ingredients

175g plain flour

25g rolled oats (plus extra for sprinkling)

175g brown sugar

1 teaspoon baking powder

1/2 teaspoon bicarbonate of soda

1 tablespoon neutral flavoured oil (sunflower, olive oil)

180g natural yoghurt

1 egg

zest and juice 1 large orange

9 teaspoons of marmalade

How to – Traditional

  1. Line 9 holes of a 12 hole muffin tray with paper cases and fill the remaining 3 holes with water (to ensure even cooking.) Preheat oven to 200C.
  2. Mix flour, oats, sugar, baking powder and bicarb in a bowl and set aside.
  3. Mixt the oil, yoghurt, egg, zest and juice together with a fork and then gently fold in the dry mixture until just combined.
  4. Place 1 tablespoon of muffin batter into each paper case, top with 1 teaspoon of marmalade and then divide the remaining batter equally between the paper cases.
  5. Sprinkle over some oats and bake for 15-20 minutes until cooked through and golden.
  6. Allow to cool slightly before devouring.

How to – Thermomix

  1. Line 9 holes of a 12 hole muffin tray with paper cases and fill the remaining 3 holes with water (to ensure even cooking.) Preheat oven to 200C.
  2. Add flour, oats, sugar, baking powder and bicarb to TM bowl and mix for 5 seconds on reverse speed 4. Set aside.
  3. Add oil, yoghurt, egg, zest and juice and mix for 5 seconds on speed 4.
  4. Add the dry ingredients to the TM bowl and mix for 5 seconds on speed 4.
  5. Place 1 tablespoon of muffin batter into each paper case, top with 1 teaspoon of marmalade and then divide the remaining batter equally between the paper cases.
  6. Sprinkle over some oats and bake for 15-20 minutes until cooked through and golden.
  7. Allow to cool slightly before devouring.
