In My Kitchen May 2025

It’s the start of the month (and the start of summer here in the UK – woot!) so that means it’s time to join Sherry and friends for a kitchen catch up for the latest edition of In My Kitchen. Why don’t you grab a cuppa and join me?

Rhubarb season has well and truly begun so I made my first rhubarb crumble of 2025. Spoiler alert it won’t be my last!

I lost my nana 31 years ago and I miss her every single day. She’d be 111 this year so I commemorated her birthday with a twist on her signature recipe, the choc chip bread pudding. I would have made her traditional version with apples and sultanas but I’d run out of apples so I had to improvise. It’s a very hands on (or should I say hands in?) recipe and there’s something so comforting about making it, never mind about how good it is to eat it!

I was brought up in a home where food was love. So when I miss loved ones who I’ve lost I like to make a dish that they loved or they taught me. I find this really comforting and a heartfelt way to honour them. So when the 4 year ‘anniversary’ of losing my mum rolled around, I made her favourite cheesecake. Honestly, I don’t know where the time goes – those 4 years feel like a minute and eternity all at the same time. Sigh.

I’ve promised myself that if I’ve got a new recipe that I love, I’m going to post it promptly rather than my default setting of typing it up and then leaving it to gather dust in my drafts folder! So with that in mind, I posted my recipe for my pot stickers which if I say so myself are the bomb diggity.

I followed the dumplings up with another of our new most favourite meals these One Pot Paprika Meatballs. It’s been a regular feature on our meal plan and it’s a great batch cook dinner – it freezes so well.

It feels like recipes on the blog are like buses, you wait ages for one and then two come along at once LOL. I feel like while we have daylight savings and the light is right, I need to gain some momentum and take advantage of the situation.

We had a few days in Disneyland Paris, the happiest place on earth or at least the happiest place in Europe! I think I showed great restraint with all the Disney themed kitchen ware but I couldn’t resist this Minnie Mouse apron, isn’t it the cutest?

We also enjoyed some bubbles while waiting for the fireworks, mainly so I could bring home these souvenir glasses. I see them having many outings on picnics and drinks on the green with the neighbours.

Talking of drinking receptacles, we stayed at The Newport Bay Beach Club, a Disney hotel with a nautical theme. I enjoyed our stay so much I splashed out on some espresso cups as a souvenir.

I could not leave Disneyland without this cute teaspoon – it is literally fit for a princess!

We followed the days in Disneyland with a couple of nights in Paris proper. It was a bit of a whirlwind to be honest. I had planned to bring back butter, cheese and cold meats but the border rules have recently changed and you can no longer bring meat or dairy products from Europe into the UK because of foot and mouth across the continent. Boo! So all I brought back from Paris was a baguette and these Haribo lollies which are way fizzier than the English offerings. Not quite the deli items I had dreamed about but I must not complain!
