Chewy Carrot, Walnut and Sultana Slice

Makes 24 squares

This is an oldie but a goodie and you need little more than some ingredients from the pantry and a bowl and a spoon. Let’s do it! (If you want to do it with a Thermomix, you’ll find the conversion here.)

Ingredients

125g (4 ounces) butter, melted

1 cup (220g) firmly packed light brown sugar

1 egg

1 ½ cups (135g) rolled oats

50g  coarsely chopped walnuts

50g sultanas

1 medium carrot (120g), grated finely

¾ cup (110g) plain flour

¼ cup (35g) self-raising flour

LEMON GLAZE

1 cup (160g) pure icing sugar

1 egg white

1 tablespoon lemon juice

How to

  1. Preheat oven to 180 F/350 F. Grease 20cm x 30 cm  rectangular pan, line the base and long sides with baking paper, extending paper 5cm (2 inches) over sides.
  2. Combine melted butter, sugar egg, oats, nuts, sultanas and carrot in medium bowl; stir in sifted flours. Spread the mixture into pan and bake for about 30 minutes
  3. Meanwhile make lemon glaze. Sift icing sugar into  a small bowl and stir in egg white and juice until smooth.
  4. Drizzle glaze over hot slice; bake about 5 minutes or until glaze forms a crust. Cool slice in pan before cutting.
