Groundhog Dinner

It’s a new day and a new dinner! There’s more fun with friends, Anton and Jim are coming over for a feed tonight! Dinner dates are like buses… you wait ages for one, and then two come along at once!

Jim must be thinking it’s Groundhog Dinner especially when I serve up last night’s surplus dips to start! However, I get more original as the night goes on. I’m thinking something big and hearty as I have three strapping lads to feed after all.

First off I get my Chocolate Self-Saucing Pudding  into the slow cooker. It’s so quick and easy to prepare and once it’s in the slow cooker, I can go and make a mess in another corner of the kitchen! The other bonus is that it will cook to perfection and leave the oven empty for the hero of the dinner, the Meat Pies Take 2.  

I love the Meat Pie recipe I made for the visitors and although they’re fine, they’re a bit fiddly. I need to get my skates on in the kitchen for an after work dinner. I find another awesome Australian Women’s Weekly recipe, that’s slightly different, but much quicker, and using store bought pastry is such a neat cheat! My Meat Pies Take 2 look totally awesome. I’m well chuffed. Of course, you can’t have a pie without mash, and there’s no better way to whip some up than in the Thermie. Now Jim can say he has tasted the best of the Thermomix!

The mains are marvellous but we still squeeze in some of that delicious Self-Saucing Pudding for dessert. It’s cooked to perfection, and great with cream or ice cream, or even better a bit of both.

I can feel my waistline widening almost instantly. Healthy eating and no more treating tomorrow!
