Makes 2 large pizzas (easily halved)

This pizza was a happy and most delicious accident. It was raining kangaroos and koalas outside and the idea of getting soaked on a trip to the supermarket really did not appeal. So instead we did the sensible thing, put our PJs on, binged on Netflix and emptied the fridge.

We had some hot smoked salmon that needed using, some sad looking spinach and we always have a selection of cheese so a pizza with our favourite 2 ingredient pizza base seemed the obvious choice.  I always have a stash of homemade pasta sauce in the freezer, but if you don’t, tomato paste will work wonders as a base too. What started off as a pot luck dinner turned out to be one of our all time favourite pizzas. Isn’t it funny how life turns out?

Smoked Salmon Pizza 2

Ingredients

FOR THE PIZZA DOUGH

200g natural Greek yoghurt

220g self raising flour

FOR THE PIZZA BASE

1/4 cup homemade pasta sauce  (or tomato paste)

50g baby spinach

1 cup grated mozzarella/pizza cheese

150g hot smoked salmon

1/2 cup feta

How to – Traditional

  1. Preheat the oven to 200C /180C fan-forced.
  2. Mix flour and Greek yogurt together in a bowl. Transfer to a  lightly floured work surface and knead the dough, adding more flour as needed to keep dough from being too sticky, for about 8 to 10 minutes.
  3. Lightly grease 2 pizza trays. Divide dough in half and spread each portion of dough to edges of pan.
  4. Bake for about 5-7 minutes until just golden at the edges. Remove from the oven and carefully flip the base over using a spatula.
  5.  Cover the base with tomato sauce.
  6.  Sprinkle over spinach leaves, and then top with half the mozzarella, then the smoked salmon, then the feta and finally, the remaining mozzarella.
  7. Return to the oven for another 8-10 minutes until the edges are golden and the cheese has melted.

How to – Thermomix

  1. Preheat the oven to 200C /180C fan-forced.
  2. Add flour and yoghurt to TM bowl and mix for 6 seconds  on speed 6. 
  3. Set the dial to closed lid position and knead for 1 minute  on interval speed.
  4. Lightly grease 2 pizza trays. Turn the dough out onto a lightly floured board and divide in half. Roll out each portion in to a large circle, big enough to fill the pizza tray.
  5. Place the dough in the pan  and spread the dough to the edges.
  6. Bake for about 5-7 minutes until just golden at the edges. Remove from the oven and carefully flip the base over using a spatula.
  7. Cover the base with tomato sauce.
  8. Sprinkle over spinach leaves, and then top with half the mozzarella, then the smoked salmon, then the feta and finally, the remaining mozzarella.
  9. Return to the oven for another 8-10 minutes until the edges are golden and the cheese has melted.
