Pre-Festive Feast

These days waking up is hard to do. I’m not just tired in the mornings, I’m almost half dead. It’s like I’m waking up from a coma! I don’t know if I’m going to bed too late or it’s the drugs but man, I’m bushed! So I’m not sorry when Kathy says she has to cancel our 6am training this morning. I’m not sure I would have even been able to be half awake! The extra hour sleep is well needed and much appreciated! Thanks Kathy!

Work is super busy. Although, I love going on holiday and could easily make it my life’s work – it’s such a hassle having to prepare everything at work before I go! It’s probably just because I’m a control freak and have to dot every i and cross every t but it seems to take forever! Sometimes I fantasise about having a job where I can go on holiday with a quick flourish and a total escape from my desk… and then just pick up where I left off when I return! However, I’m lucky enough to a) be going on holiday and b) to have a job that I love, so I’ll quit wanting what I haven’t got and count my blessings instead!

In the evening, we have our pre-Christmas dinner with Shannon and Jane. There’s a very festive feel what with the tree, the cheesy yuletide music, the impossible-to-pull crackers, dodgy hats and a few good bottles of wine! To start, I knock up some quick, easy and low fat dips; Low Fat Hummus,  Quick Beetroot Dip and my Spicy Tomato Dip. (I love doing that whole “here’s one I prepared earlier!”) It’s oh-so-healthy as we munch it up with fresh veggies and some pitta crisps. My friend Chrissy showed me the perfect pitta trick. It’s so simple, just cut the bread up into small, dippable-sized triangles, place on a baking tray and then pop into a hot oven for a couple of minutes. They come out all crispy, delicious and ready to dip.  After a bit of nifty knife work, the mains are ready, Honeyed Ginger Fish Bundles with Asian Coleslaw, Steamed rice and Steamed Asian Veggies. There then follows a sojourn on the sofa to rest our tired tummies. Later, we finish off our festive feast with  Sweet Lime Mangoes and Mango and Coconut Gelato which is washed down with a glass of yummy Rummy Port. We’re full to the brim, feeling festive and have had a lot of fun!
